Quick and Easy Strawberry Banana Hazelnut Crepe Recipe

Raise your hand if you’re a brunch fan like me! Call me basic, but I LIVE for brunch; especially on the weekends. While sleeping in doesn’t happen regularly any more, I love that it gets us in the kitchen early. Starting the weekends with a yummy brunch sets the tone for our busy weekends. There’s just something about that slow, lazy first meal before we wind up for the hustle and bustle of weekend activities.

While we usually opt for an easy-to-put-together spread like omelettes and toast, I’m always game to throw in a fun “extra” recipe too. This is the simplest and easiest crepe recipe hands down. Believe me when I say that if I can cook these and make them look and taste this good.

The recipe is for the crepes and you can easily swap out the toppings for different flavors and fruits. My favorite is the Strawberry Banana Hazelnut with Granola topping. But, we’ll use whatever berries we have on hand. We also switch things up with different filling like custard or hot chocolate. Hands down, the hazelnut spread is the best and perfectly textured filling for these crepes.

While refrigerating the crepes batter isn’t required, I’ve learned through trial and error that this makes for the perfect texture. It also makes it easier to cook on a nonstick pan. There’s no issues with burnt edges or the crepes getting stuck on the bottom of the pan. Maybe it’s user-error, but the refrigeration time is key to making the perfectly thin, crispy, yet fluffy crepes batter.

Quick and Easy Strawberry Banana Hazelnut Crepe Recipe

Yields4 Servings

 1.50 cups flour
 1 cup water
 0.50 stick butter
 salt
 4 eggs

Mix all ingredients in a bowl and pour into blender for five minutes until batter is smooth.

Pour batter back into mixing bowl and refrigerate for one hour.

Warm frying pan on medium heat.

Pour batter into a small circle in center, swirl pan around to cover the surface.

Cook for one minute; flip and cook the other side for one minute.

Shut off heat, glaze hazelnut spread on one side of crepe.

Fold into halves, then quarters.

Plate crepe, top with fresh berries, bananas, granola, etc. and enjoy!
