Easy Lunch Meals for the Work Week

One of the pitfalls of being a work at home mom is not regularly eating at meal times. Breakfast is almost always on the go, as we get the kids out the door for school. Lunch time usually flies by in a flurry between conference calls and writing projects. I’m lucky if I make time to reheat my (second or third) cup of coffee during the day.

I love simple and easy lunch meals for the work week that don’t sacrifice taste or quality. Have you guys tried Gorton’s Shrimp Bowls? They are super easy to make and so delicious to eat! A full meal cooked in less than six minutes. It makes it much easier for me to make sure I take a lunch break and get in a good meal before I finish out the rest of my work day.

I’m sure you guys can agree that it’s hard to find convenient easy lunch meals for the work week that taste fresh and have yummy ingredients. I don’t have time during the day to cook from scratch. The Stir Fry with Soba Noodles Shrimp Bowl is as good as it sounds. The perfect easy lunch meal for mamas with hectic days!

D & I also tried the Black Garlic and Wine Risotto Shrimp Bowl last night that is great for an easy date night in! It’s a bowl full of perfectly cooked Shrimp and mushroom risotto in a black garlic & wine sauce that’s perfectly paired with a glass of wine (or two!). 😉
