Quick and Easy Tofu Salad Bites

When managing a household of five (and two dogs!), anything in the time saver department is a necessity in my day to day life. I’m definitely one to practice efficiency in the kitchen. You know I’m all about quick and easy when it comes to recipes. So, here’s another household favorite that I want to share with you! These quick and easy tofu salad bites work great as an appetizer for a dinner party or a quick lunch or light dinner for the whole family! With the weather starting to warm up, I love changing up our regular menu to enjoy some fresh and crisp flavors during the spring and summer months.

These quick and easy tofu salad bites are made with Mori-Nu Silken Tofu Extra Firm from Morinaga Nutritional Foods, Inc. It’s my fave silken tofu because it has the smoothest texture and a great flavor. I love that Mori-Nu Silken Tofu products are sold in a unique aseptic package that protects the fresh tofu from light and bacteria. The shelf life is long without the need for refrigeration or added preservatives. And this mom of three boys can use all the extra space in the fridge!

I love using tofu as the main protein in dishes to switch up our usual meals. It’s a great protein alternative to a lot of our household favorites from smoothies to desserts and our go-to eggless scrambles for brunch! Also, Mori-Nu Silk Tofu is Kosher, non-GMO, a couple of them are organic and gluten-free, which makes it a great option for everyone to enjoy. It comes in a variety of different firmness so that you can make different types of tofu dishes.

There’s hardly any prep time and the cooking time is super quick too. I love using different fresh (or frozen) veggies as toppers and using various sauces for added flavor. The kids love eating the tofu bites plain or dipped in ketchup. I enjoy it with fresh cucumbers/carrots or with a little kimchi topping.

The variety of different toppings that you can add is what makes it so family-friendly. I don’t know about you, but anything that my kids eat without me asking them multiple times is a huge win!

 1 Mori-Nu Silken Tofu
 1 Egg
 Shredded Veggies
 Salt & Pepper

Cut Mori-Nu Silken Tofu into squares (8 pieces total). Beat egg for one minute and add in salt/pepper.

Dip tofu in egg. Pan fry for five minutes, flipping as needed until golden brown.

Top with shredded veggies and serve!
