These summer days are flying by all too quickly around these parts. I’m already sad about the end of the summer season coming up so soon. Even though we love our summer weather and activities, I love the structure of the school season. The one thing that I’m looking forward to is getting the boys prepped and ready for their school year in early September.

One of the best parts of the kid(s) getting back to school is that it keeps me more motivated to stick our meal planning schedule. We’re always trying different combos and foods that mix all our favorites. I had to try my simple and easy Korean/Mexican fusion recipes. What’s not to love about easy recipes and my two favorite types of food?!

Simple & Easy Bulgogi Tacos & Bibimbap Burritos

Bulgogi beef is a favorite dish in our house, as are tortillas. Both foods are so versatile and easy to cook! These bulgogi tacos and bibimbap burritos below are some of my go to dinner dishes that we all enjoy year round, but especially during the hustle and bustle of the school season.

 6 Tortillas
 1 lb Top Sirloin or Ground Beef
 5 tbsp Sesame Seed Oil
 0.50 cup Soy Sauce
 4 tbsp Sugar
 4 pinches Salt & Pepper
 1 Small Onion (Diced)
 2 cups Shredded Lettuce
 1 cup Shredded Carrots

Bulgogi Beef: In hot pan, sauté ground beef or top sirloin beef (sliced into strips) until brown with sesame seed oil. Add onion and sauté. Add soy sauce, sugar, and salt/pepper to taste until meat is fully cooked.

Cucumber Kimchi: Slice cucumbers and onions. Add 2-3 Tbs of vinegar, sugar, red pepper flakes,

Cook Tortillaland tortillas on heated pan, 30 seconds each side.

On tortilla, assemble 2-3 Tbsp of Bulgogi, shredded carrots, lettuce, tomato.
